Summer Smoothie Bowl

In the last few months, porridge seems to have taken over from the smoothie bowl / Acai hype on the market and online, but that doesn’t make it any less delicious. Now that summer is on it’s way, a piping hot bowl of porridge isn’t always appropriate for a summers morning (what am I saying? There’s always time for porridge!) and instead a cooling and refreshing berry bursting bowl of goodness is just what I fancy.

Many smoothie bowl recipes are heavily fruit based with little carbs. I love my oats and they always fill me up for hours. I’ve added into this recipe a porridge-like foundation that not only fills me up for hours after, but the extra fibre helps to absorb and regulate blood sugars, protecting from the rise and fall after the intake of a lot of sweet fruit.

Ingredients

  • 1 Handful Oats
  • 1 tbsp Chia seeds
  • Approx. 150ml Plant Milk
  • 1 Sliced and Frozen Banana
  • 2 tbsp Acai Powder

I topped with Figs, Raspberries, Coconut Yogurt, Homemade Granola and Honey.

Put all of the ingredients into a blender, and leave to soak for about 5 minutes to let the oats and chia seeds swell and the frozen banana soften a little without losing its coldness. (By letting the oats and seeds swell before eating, it means they won’t swell in your tummy and are less likely to cause bloating).

Blend until creamy, adding more milk if needed. Serve straight away.
