This has been one of my favourite porridges ever since I discovered how much I adore porridge, so I can’t believe it’s taken me this long to post the recipe! Freshly made berry compote is the most amazing thing on porridge and it takes only as much time and effort as making the porridge itself so it really is the most convenient ways to spruce up your oats and add interest to your daily variations. The recipe is the same for any berries you wish to use, blackberries are another favourite of mine (with cinnamon porridge..perfection!) I hope you like this one, let me know how you get on!
1 tbsp Chia Seeds
1 Handful Desiccated Coconut
Approx. 200ml Coconut/Oat Milk (enough to cover oats as indicated)
1 Handful Blueberries
Suggestions to serve: Pistachios, Flaked Coconut, Almond Butter, Pumpkin Seeds
Put the blueberries in a pan with a splash of water and heat on high for 1 minute. In a separate pan, heat the milk, oats, chia seeds and desiccated coconut gently. When the blueberries are hot, begin to squash with a fork, turning the heat down and letting them bubble. Continue to stir the porridge until it’s warmed through and the oats have swollen (takes about 5 minutes). Serve the porridge in a warm bowl, pour the mashed blueberry compote and top, and sprinkle over any toppings (I love nuts and seeds, and almond butter!)
