Courgette Carpaccio with a Walnut Dressing

I can’t believe how quick (like 2 minutes) and tasty this little side is, it doesn’t even need many ingredients! It’s a fantastic salad-type accompaniment to any meal, and it’s alsoΒ really great on it’s own for a starter or lunch. It’s multi-purpose, mega-tasty and really light and healthy. It’s the kind of fresh snack that even the carnivores in your family will adore.

Makes one sharing platter (2-3 servings)

Ingredients

1 Courgette

10 Milled Walnuts

1 tsp Tapenade

3 tsp Olive oil

Using a Mandolin, thinly slice the courgette. Combine the pre-milled walnuts (you can mill regular walnuts in a blender to create a mushy flour), the olive tapenade and the olive oil in a bowl and serve either over the courgette or in a side dish.

Really nice served with beans as the beans go lovely with the dressing too!
