Energy Balls are so handy to have in the fridge because they’re a really great grab-and-go snack and a healthy and delicious accompaniment to tea or coffee. The nuts in these are packed with protein which is great for energy without the after slump of processed sugar, and the dates are full of fibre to keep you fuller for longer. Another great thing about energy balls is that as long as there’s enough stuff to stick them together (nut butters, dried fruit/dates, sticky sweetness like honey) you can basically mix whatever you want into them. Although these are my current favourites.

2 tbsp Almond Butter
6 tsp Desiccated Coconut, plus a bit extra for coating
4 tsp Raw Cacao Powder
2 tsp Honey
10 Dried Apricots
Add all of the ingredients to a food processor, and blend on high until mostly smooth and it starts to stick together. Take small handfuls out of the mixture and squeeze together in your hands, rolling it into a smooth ball. Make the balls whatever size you like, I make mine smaller so I get the satisfaction of having two or three! Sprinkle some coconut onto a plate and then take each piece and roll it around in the coconut until it’s got a light coating.
Keep them covered in cling film in the fridge, they should last a couple of weeks.
