Avocado on Rye


This is one of my favourite summer lunches, not just because I’m a massive fan of avocados, but because it’s so incredibly quick (5 minutes max!) Avocados are so delicious and creamy on toast, and with the extra addition of zesty lime juice and a subtle heat from the chillies it really makes the most wonderful lunch! I also love to scatter seeds on my toast toppings, whether I’m having avocado, nut butters or bananas on toast I just think it’s a fantastic way to add even more goodness and texture to something as simple as toast.



2 Sliced Rye Bread (or any bread of your choice)

1/2 Avocado, roughly mashed

1 pinch chopped fresh Chilli

1/2 Large Tomato, sliced

To serve:

1 Handful of Rocket

Sprinkle of mixed seeds

Squeeze of fresh Lime


While your bread is toasting, slice your tomatoes and prepare the avocado. Scoop the avocado out of it’s skin and roughly mash it onto your toast, adding the tomato, chillies, lime and seeds to the top. Enjoy with a side of rocket!
