Coconut and Pistachio Porridge

I’m sorry! I couldn’t resist! I really need to share something other than porridge for breakfast but this just looked and tasted way too good not to share with you. Like always, it’s wonderfully quick and can be prepared the night before so you hardly have to do anything in the morning but heat it up.



2 Handfuls Oats

1 Handful Chia Seeds

1 Handful Desiccated Coconut

Coconut Milk to your liking (the runny type you get in cartons, not the thick tinned milk)

To serve (Optional): Pistachios, Date Syrup, a dollop of Almond Butter, Blueberries


Add all of the ingredients to a pan (except the ‘to serve’ ingredients) and heat gently for a few minutes until warm. Keep adding more coconut milk until it reaches the consistency you like best. Spoon into a warmed bowl and toss on your toppings. I think it’s extra yummy with a cup of white tea!
